(my mom's recipe)
1 cup dry couscous (1/2 box)
Cook couscous:
Boil 1.5 cups water with 2 teaspoon margarine,
add couscous and remove from heat,
let stand covered for 5 min,
fluff and put in bowl
Mix with:
2-3 green onions chopped
1/3 cup red onion chopped
1/4 cup pine nuts
1/3 cup red bell pepper chopped
1/2 small tomato chopped
3 tablespoons parsley
1 can garbanzo beans
Make dressing:
1/4 cup safflower oil
1/4 cup seasoned rice vinegar
1/2 teaspoon ground pepper
1/4 teaspoon paprika
1/4 teaspoon hot red pepper flakes
1/4 teaspoon garlic salt
pinch of cayenne red pepper
pinch of chili powder
pinch of oregano
Pour dressing over and mix throughout
