Oran's Cuban Casserole [7/25/2007]

1 can black beans
1 can corn
1/2 cup vegetable oil (approx)
2 jalapeños finely minced
1 bunch green onions sliced
1 white onion chopped
1 pkg (~1lb) jack cheese sliced
1 small (~7oz) can black olives sliced
1 egg
1/4 cup milk
1 tablespoon brown sugar
1 16oz. container sour cream
1/2 cup cornmeal
1/2 cup flour
1/4 teaspoon baking soda
1/2 teaspoon baking powder
4 cloves garlic minced
1 1/2 teaspoons salt
pinch of pepper
2/3 teaspoon cumin
1 teaspoon coriander
1 teaspoon paprika
2 dashes of cayenne pepper
2 teaspoons chili powder

shredded lettuce
diced tomatoes

Corn Bread Wet Mix:
In a large bowl, mix together
1 1/2 finely minced jalapeño
1 tablespoon oil
brown sugar
1/4 cup sour cream

Corn Bread Dry Mix:
In medium sized bowl, mix together
Corn Meal
Baking Soda
Baking Powder
1/2 teaspoon salt

Dry Spice Mix:
In a small container combine
grind 1 tsp coriander seed
grind 2/3 tsp cumin seed
1 tsp salt
pinch of pepper

Wet Spice Mix:
In a small bowl mix together
1/3 cup veg oil
1 tsp paprika
2 shakes cayenne pepper
2 tsp chili powder
2 cloves garlic
optional 1 tsp gin
optional 1 tsp lime juice

Bean Mix:
In a saucepan, add the whole can black beans including any liquid in the can
Simmer and stir lightly for 5 min
Add Dry Spice Mix
Mash on low heat 5 min
Add Wet Spice Mix
Cook until paste like with little liquid
Stir in 1/4 jalapeño
Cook about 1 min
Remove from heat

Onion Mix:
Fry onion in oil
Once soft and golden Add
1/4 jalapeño
2 cloves garlic
Stir for about 1 min
Remove from heat

Layer in 8 inch square baking pan
Layer #1 Green onions (1 bunch sliced)
Layer #2 Bean Mix
Layer #3 1/2 can corn
Layer #4 Onion Mix
Layer #5 Sliced black olives
Layer #6 Sliced jack cheese. Try to overlap slices to completely cover over the 8x8 square.

Layer #7 Cornbread Mix:
Add dry corn bread mix into wet corn bread mix slowly stirring more and more in until fully mixed.
Stir 1/2 can corn into batter
Pour batter on top

Put in oven quickly
Cook 400 degrees for ~30 min
It will be bubbling and very hot
Let stand for 15 min before eating

Optional toppings include:
Shredded Lettuce
Diced tomatoes
Sour Cream
